To find Honey in more quantity, you need to look for tree trunks that have beehives attached to them - interact with such objects to have a chance of obtaning Honey.

Moreover, there are further locations that contain Honey - rooftop gardens with characteristic tall trees. When attempting to loot a rooftop, remember that you'll most likely encounter a few enemies there and have to fight for the resource. Once the area is clear, look for wooden hives which contain the ingredient.
