On this page of the Resident Evil 4 Remake game guide, you will find information on the best way to deal with parasites, which can cause you a lot of problems.
How can I know I am fighting a parasite?
Sometimes when you kill an enemy, their head transforms into a tentacle-like creature. This means that the character is still alive and has a unique set of attacks. This is when the fight against the parasite will begin. Under no circumstances should you approach a parasite if you don't have to, as their cuts are very fast and inflict heavy damage.
How to kill parasites quickly?
There are several ways to do this. The fastest way is using the flash grenade.
It's mainly because the parasites are very sensitive to light, so much so that they instantly die if they get in its range. This will work best if you have to fight several such enemies at the same time.
The second way is to quickly kill a barely alive opponent. Usually, that's when they lie on the ground and wiggle. You then have a brief moment to approach such enemy and kill him with a knife instantly. If you do not have any knives in your possession (or they have been destroyed), you aren't able to do so.
If you don't have any knives or flashbang grenades in your inventory, the last way is to shoot at the weak spots. If you have to fight parasites, focus on their head, and don't aim the body of the infected, as you will inflict less damage and lose much more ammunition, which could come in handy in later stages.
