Demon's Souls is known for its high difficulty level, which means that you will die quite often in this game. Therefore, you should keep in mind what really is at stake when your character dies. After death, the first thing you should notice is that your health bar is cut in half. This is because your character lost their "body" and reappeared as their "soul".
The way to overcome this unpleasant problem is to regain your human form. There are many solutions to this issue. You can use Ephemeral Eyes to recover your body. You can also defeat any boss to regain all health, however, this task is a bit more difficult as you will only have half of your HP during the boss fight. There is also a ring that slightly increases your character's health in soul form, however, it won't bring you up to 100% HP. Still, remember that if a given stage is causing you trouble and you don't want to shift the world's tendency towards black, it's better to try to fight in soul form, because then the tendency won't shift.
In the aftermath of your character's death, you will also lose all of the experience (i.e. souls) that you have gathered so far. You can get them back as long as you don't die again, because then you lose your previous souls and you will only be able to recover as many souls as you had at the time of your last death. To do this, you need to go where your character died, then pick up the souls that will appear in the form of a blue pillar.
Additionally, the opponents previously killed by your character will re-spawn, so you will have to eliminate them again to reach the place of your death.
