This page of the Hitman 3 game guide lists the best disguises to get in the Mendoza during The Farewell mission. Using the outfits listed on this page can help you explore the off-limits zones and heavily guarded areas of the winery and Don Yates Villa.
Both of these disguises, despite significant differences in appearance, feature similar powers. The gaucho (local bodyguard) outfit will come handier in the gardens around Yates' villa, while the bodyguard outfit may help reach areas of the winery inaccessible to guests.
Unfortunately, in both cases, you won't be able to move freely around the villa - in this case, the most effective will be a Mercenary disguise (we described it in a separate section).
You can obtain both disguises - gaucho and bodyguard - quite easily in the same place. The ideal location is the parking lot in the western part of the map, near the starting point (point 6 on the map). It is a forbidden zone, so once you jump over the barrier, start sneaking between the cars. Head west.
You will arrive near a small room adjacent to the parking lot (no. 9 on the map). Toss a coin (or sabotage the fuse box inside the building) to distract the enemy gaucho. After he gets closer, eliminate him quietly. Throw his body through the open window, hide it in the closet and put on the gaucho disguise.
You can get the bodyguard disguise the same way - throw a coin again, attack the bodyguard in a secluded area, throw the body through the window and hide it in the closet.
The mercenary disguise is the best one in this mission. You'll be able to travel freely across almost the entire map and will need to avoid only individual enemies who can recognize Agent 47 despite the disguise.
You can take a mercenary outfit from one of the mercenaries on the map. Look for mercenaries occupying a trailer in the parking lot, not far from where the mission begins(point 6 on the map).
Sneak into the parking lot, walk a bit west and then turn north. Head towards the trailer and climb onto its roof.
From the trailer, jump down to the adjacent garden (point 12 on the map). Use a coin to catch mercenaries' attention and make one of them head out to the garden to check out the source of the suspicious sounds.
It can take some time for the mercenary to reach the garden, so be patient. Before you attack him, make sure that none of the NPCs around the roundabout or the gauchos patrolling the gardens look in your direction. You can leave the mercenary's body in the tall grass.
You can also find a mercenary disguise, and for that, you have to visit the armory room on level 2 (point 39 on the map), near the eastern path at the back of the villa.
In the armory, you need to open the cabinet from the picture above - use the key / lockpick / crowbar.
The waiter disguise is not particularly helpful in exploring the map due to limited privileges, but it can come in handy to poison the most important NPCs on the map.
The ideal place to get a waiter disguise is the wine tasting room (point 36 on the map). There is a storage room in the corner - explore it.
In there you will find a fuse box. Sabotaging it will cause a waiter to show up. Follow him into the storage room to get rid of him.
You can immediately use your new disguise to poison Tamara when she appears in the wine tasting room (make sure you have lethal poison and a bottle of blue wine).
You can also choose the waiter outfit when starting a mission. The alternate starting location will be unlocked after you reach at least level 7 Mastery in Mendoza.
