Polyphemos the Enraged is a very slow boss, and his attacks are easy to predict and avoid. However, if you fail to do so, you will receive heavy damage. One mistake and you could end up with little health.

Boss attacks can deal that much damage that you should not parry them. A much better option is to avoid them, to slow down time, and hit it without taking any damage. One of his attacks is grabbing a club with both hands and hitting you. When you see a swing, make a dodge to slow down time and start attacking. However, be careful, because one wrong move and you will lose a lot of health.

Bose can also stomp his foot on the floor. This attack will cause an explosion around his foot and create an odor that will remain on the ground for a while. Entering it will cause you to start receiving damage over time. It is best to avoid the area for a while.

The boss also has two ordinary attacks, which he performs one after another. He usually uses them when you're very close to him. These attacks can be paired, but it is better to dodge them and attack him.

Polyphemos the Enraged is not a difficult boss. In general, he very often uses his club while lunge forward. It is worth being close to him and moving towards his legs so that most of the attacks do not hit your character. To win, you should perform as long as possible combos, which shouldn't be difficult.
