Gold Bolts give you access to additional configuration options.

Collecting Gold Bolts will give you various benefits. The achievement you gain for collecting all of them aside, each one of them gives you access to new options from the menu. To get there, activate menu and select the "Extras" option.

Inside of the Extras tab you can find:

1. Galleries. This allow you to look through dozens of pictures and concept arts of various characters, weapons and environments. This won't give you any edge in battle, but this is a huge reward for all those collectors who are looking for more information about the game.
2. Appearance options. They allow you to adjust the appearance of the character - select a head mask, the color of the outfit (as well as the ship you use to travel) and so on. Additionally, you can change some of the aspects of the gameplay - you can change the look of bolts, so that enemies will be dropping Sonic-like rings, you can activate a filter that will give the game a 70s game vibe, etc.
3. Cheats. An option that most players will be interested in. You can activate two options - infinite ammo and infinite health.

Collecting more and more bolts will unlock more advanced options. Cheats require you to acquire most of them.
