V is rather peculiar. He doesn't attack enemies. Instead, he uses his familiars, Griffon, Shadow and Nightmare to damage demons. Despite that, he is the easiest character to play as (even though his fights are a bit chaotic). One of his advantages is that you can get high Ranks fast. Remember, V must finish every enemy off.
Upgrade both demons but use only one of them in fights. You can use this solution in the early parts of the game where you need to get accustomed to this character. When a fight starts, summon both demons but control only one of them. The other demon should be set to auto-attack mode. Remember, auto-attack mode works only for a limited period of time.
Personally, I prefer playing as Griffon. Shadow can manage himself pretty well - this familiar relies on brute strength than strategy. When you control Griffon, use Round Robin to protect V, and Flank Attack to stop enemies attacking Shadow.
Remember to replenish your Devil Trigger gauge by reading the book. Try to upgrade this ability when you are in the early stages of the game - you will be able to set enemies into auto-attack more often and summon Nightmare for longer periods of time.
