You won't find a description of all religions found in game in this guide. For three reasons. First, most countries have great difficulties with changing the official religion. Huns start the game with one hundred percent fate in Tengri, and in Western Roman Empire at least four different religions are in a state of unstable balance, slightly increasing or decreasing their reach in the country. In practice, only barbarians are able to change their faith, and even that only if they won't build any religion buildings, won't recruit priests and will only conquer provinces with religion unknown to them. Second, religions offer small bonuses like +1 to growth or army recruiting capabilities. Combined with other bonuses it might be important, but by itself religion offers too little to get into the trouble of converting. Third, change of religion requires to have at least 35% of its followers in the country. Smaller countries can try to get that amount, but in case of larger ones, where there already exist temples and priests, you would need to calmly wait for intervention of alien priests or random events. It is so because you can only build temples of your religion. So, for other religions to spread in your country, you must wait for temples and priests to improve its reach. Which can take very long as you can't choose which religion should get more influence in your country.
For that reasons, it is better to keep to the beginning religion and share it, instead of thinking of conversion. You will quickly see that other faction prefer to stay with the base religion instead of changing it as well. It is simply quicker and more effective, what you will find by yourself if you try to make a conversion with a large country.
As for the game mechanics, religion can serve various purposes. The official one offers bonus working on the whole country. Having the same religion as other nation increase diplomatic relations, as having different ones makes them worse. It influence public order level in provinces and dictates what religion buildings can be build in it. It especially affects settlements that are the capitols of religions. As you can see, the influence of religion isn't very big - for example, large religion differences make the order in a province drop only bye few points - but you shouldn't ignore it. Just don't focus so much attention to it as to other, more important manners.
