Each race has its own unique passive skills and additional Ability Scores to distribute when creating character. Humans have 2 additional Ability Scores you can put on any ability, rest of races have predefined ability with +2 bonus and another +2 points to one of two abilities to choose from.

Some races will be better choice for some classes due to good Ability Scores match, but there are other factors you should take into account. For example if you plan to play a lot of PvP you might want to choose race with some CC resistance like Dwarf or Elf.
