CD Projekt Red commented on the situation:
"PlayStation 5 and Xbox Series X|S are new platforms for The Witcher 3: Wild Hunt so the title had to be submitted for an age rating specifically for those platforms. This is a standard procedure, and the date listed on PEGI website is the date the rating was awarded."
This means that we should not expect The Witcher 3 on PS5 and Xbox Series X|S today. However, given the rating was awarded, we can safely assume that new editions of the game will debut in the coming months. Usually the interval between the game receiving an age rating and the release does not exceed 1-2 months.

The release of a next-gen update for Geralt's latest adventure on ninth-gen consoles seems to be very close. PEGI website added an entry dedicated to The Witcher 3: Wild Hunt - Game of the Year Edition version for the PlayStation 5 and Xbox Series X/S consoles.
What's more, the system also provides the game's release date on these devices. And a very early one at that, as the description suggests that the release of the third Witcher on new consoles will take place... later today. So we should be getting an update release announcement soon.
Of course, these are still unofficial reports, but in this case we can assume that the source does not leave much doubt about the reliability of this information.
